Whilst we may be familiar with the environmental costs of beef or the sustainability of cod populations, the list also highlights the multi-factored problems of items such as bagged salad, “It’s in plastic, it’s the most thrown-away food item, at this time of year it’s grown under LED lights in the Netherlands – it’s pointless,” says Tim Lang, professor of food policy at City University of London, reminding us that there is a long list of ethical and environmental issues that we need to consider when we come to ‘judge’ the food we eat.
