HKUST: Cultivating a Sustainable Campus

Overview

HKUST is one of the fastest-growing universities in the world. HKUST was looking to maintain its leadership position in sustainability. We designed a programme to support stakeholder engagement including large-scale caterers across 8 universities and tenants. Training and strategy workshops on food sustainability enabled businesses to identify challenges and take action.

Client Profile: HKUST

HKUST (Hong Kong University of Science and Technology) is a world-renowned university committed to academic excellence and social responsibility. With a growing student population and a diverse range of food service providers, the university recognized the significant impact of its food operations on the environment. HKUST aimed to leverage its influence to drive positive change in the food industry and create a sustainable campus community. 

The Challenge

HKUST faced the challenge of aligning its food service operations with its broader sustainability goals. The university sought to reduce its environmental footprint, promote healthier food choices, and engage students, staff, and faculty in sustainability initiatives. Additionally, there was a need to collaborate with large-scale caterers to ensure consistency and impact across the campus.   


 

Our Approach

We designed an 8 university-wide programme to engage all relevant stakeholders to educate and inspire, enable catering businesses to take action and test the market to see if we can influence diner dietary choices. 

  • Stakeholder engagement: We engaged students, F&B tenant brands, and catering company headquarters to foster a shared commitment to sustainability.
  • Sustainability training: We provided comprehensive training on sustainable food practices, including sourcing, waste reduction, and carbon footprint assessment.
  • Audits and assessments: We conducted thorough audits to identify areas for improvement and establish baseline data.
  • Prioritisation workshops: We facilitated workshops to help stakeholders prioritize sustainability initiatives and develop action plans.
  • Behaviour change program: We implemented a university-wide program to influence dietary choices and promote sustainable food consumption.

Deliverables

  • A complete sustainability report
  • Documentation of the training program, including participant feedback and attendance records.
  • Carbon footprint reduction report
  • New sustainability policies

Measurable Results

  • Audit data is being used to inform the 2026 sustainability strategy
  • Opportunities identified from the audit are being incorporated into a bespoke pillar on sustainable food systems
  • Caterers engaged in sustainability identified challenges and solutions
  • Sustainability executive hired to implement projects aligned to the newly created strategy of 5 pillars
  • Clear direction of travel and priorities mapped against the Food Made Good Framework
  • Carbon labelling programme underway for a collective of 8 Hong Kong universities.
